I love them, otherwise I'd have just a jumble of everything in my case, all of it muddled and creased. Don't be fooled by tasteful looking fancy cubes, the best are very thin and a variety of different primary colours, the whole point is easily identifying where things are.
I do. I colour code them for each person. They are very good for organising the clothes and I now wouldn’t be without them for holidays. But I’m not convinced they save space. I do also have the “compression” ones that are supposed to condense the volume of the folded clothes but, again, I’m not convinced they really do that to any meaningful amount.
Better to use the vac bags if you're certain there's a hoover the other side. Brilliant for winter hols in particular. Or anything where there are sleeping bags to transport
I am very tidy at home but I don't think I have ever felt there was time or I wanted to pack in any particular way - just shove it all in the suitcase.
Friend swears by them for just keeping bits separate and making easier shapes to pack in bag. I can never find socks because I always use them to fill random spaces in my luggage.
Imagine if, when packing for a holiday, you got to do it twice. Once into smaller, pointless packages you had to buy separately. And then try and Tetris lots of those small packages into a case, which it was actually less space efficient.
I'm really messy with things in cases, packing stuff into cubes fixes that for me. I will never be someone that unpacks their case on holiday, I just leave everything in it and rummage, this is less chaotic since I use the packing cubes.

I had never heard of these and having googled them they seem to be a time wasting solution for a problem that never really existed

Was given some as a present, use them to keep footwear or underwear etc separate
Don’t think they save space, just saves me using plastic bags. Mostly used by Insta holiday influencers

Wel yes that’s how you pack socks. Either inside shoes or randomly in any gap available.

We use them for underwear and shoes. I am a convert to that approach. I wouldn’t use them for everything though.

It's not OCD, it's the opposite.
