What the F is the point?

Because people are stupid and will pay more for fish that 'looks' fresh that they can buy from a fish counter than they will for frozen fish in a freezer. 

If that wasn't the case, the supermarkets wouldn't do it. 

Sushi grade tuna must be frozen. 

Fish that is flash frozen on the boat immediately after being caught is ideal. 

Freezing fish in your home freezer is shit though. It freezes too slowly and ends up a bit rank when defrosted.
